The Perfect Side Dishes for Your Spring BBQ

It’s grilling and BBQ season. Whether you’re hosting a backyard BBQ this spring or later this summer, you’re going to want to have some incredible sides to back up your main courses. Try making these sides if you really want to impress your family, friends, and neighbors.

Baked Potato Salad

Ingredients

  • 2 lbs baking potatoes
  • 3/4 cups sour cream
  • 3/4 cup mayonnaise
  • 6-8 slices bacon, cooked and chopped
  • 4-5 green onions, chopped
  • 1/2 cup shredded cheddar cheese
  • salt and pepper, to taste

Directions

  1. Preheat the oven to 400 degrees F. Wash potatoes and poke a few holes in them with a fork or knife. Bake for about 50 minutes to 1 hour or until they are fork tender and cooked through. Remove from the oven and cool completely. At this point you can peel them, or peel half and leave the skin on the other half to get a real baked potato feel. Cut the potatoes into small, half inch pieces.
  2. In a large bowl combine the sour cream and mayonnaise and stir well. Add the potatoes and toss to combine. Season with salt and pepper. Add the bacon, onion and cheese and fold the mixture gently to coat everything evenly. Refrigerate before serving. Garnish with extra bacon, cheese and onions, if desired.

Ultimate Baked Beans

Ingredients

  • 1½ pounds ground beef
  • 1 small onion, finely chopped
  • 1 red or green bell pepper, cored, seeded, and finely chopped
  • 2 (16-oz) cans pork and beans
  • ½ cup barbecue sauce
  • ½ cup ketchup
  • tablespoons spicy brown mustard
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon soy sauce
  • 4 tablespoons brown sugar
  • 6 to 8 slices bacon, cut into pieces and cooked

Directions

  1. Preheat the oven to 350 degrees and spray a 9×13 baking dish with cooking spray.
  2. In a large saucepan brown the ground beef. When beef is about halfway done add the onions and bell peppers. Continue to cook until beef is done and the veggies are soft. Drain meat mixture.
  3. Add the pork and beans, barbecue sauce, ketchup, mustard, Worcestershire sauce, soy sauce and brown sugar to the mixture. Simmer mixture for 5 minutes. Transfer the mixture to the prepared casserole dish.
  4. Sprinkle the bacon pieces over the top of the casserole. Cover the dish with aluminum foil and bake for 40-45 minutes. Remove the foil and continue to bake for an additional 10 minutes. Let dish sit for 10 minutes before serving.
