It’s Chicken Month! Celebrate everyone’s favorite bird by whipping up these scrumptious southern chicken recipes.

1. Traditional Southern Fried Chicken

Ingredients

  • 3 eggs
  • 1/3 cup water
  • approx. 1 cup hot red pepper sauce (more or less depending on taste)
  • 2 cups self-rising flour
  • 1 Tsp pepper
  • Peanut Oil for frying, though any oil will do in a pinch
  • 1 cup salt
  • 1/4 cup black pepper
  • 1/4 cup garlic powder
  • 1 chicken, cut into pieces

Directions

In a medium bowl, beat the eggs with water. Add hot sauce until egg mixture is bright orange. In another bowl, combine the flour and pepper. Season the chicken with the black pepper, garlic powder, and salt. Dip seasoned chicken into the egg mixture and then coat well in the flour mixture.

Heat the oil to 350 degrees F in a deep skillet or pot. Keep the oil under the half the skillet/pot’s capacity.

Fry the chicken in oil until crispy and golden brown. Dark meat will take about 14 minutes. White meat will take about 9 minutes.

Try serving with mashed potatoes, mac and cheese, and biscuits.

2. Chicken with Potatoes and Carrots

Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 2 Tbsp. olive oil, divided
  • 2 Tsp kosher salt
  • 1 Tsp freshly ground black pepper
  • 1 Tsp finely chopped fresh rosemary
  • 1 package fingerling potatoes, halved
  • 8 oz. small carrots with tops
  • 1 large sweet onion, cut into 8 wedges
  • Vegetable cooking spray

Directions

Preheat oven to 375 degrees F. Rub chicken thighs evenly with 1 Tbsp olive oil. Stir together salt, pepper, and rosemary in a bowl. Sprinkle the chicken thighs evenly with this spice mixture.

Next, stir together potatoes, carrots, and onion wedges in a large bowl. Drizzle with remaining 1 Tbsp of olive oil and then with the remaining Tsp of spice mixture. Toss to coat evenly.

After, spread the vegetable medley in an even layer on a heavy-duty aluminum foil-lined sheet pan lightly greased with cooking spray. Place chicken thighs 2-3 inches apart on vegetable medley.

Finally, bake at 375 degrees F for about an hour. Internal temperature in thickest part of chicken thighs will register at 170 degrees F when ready.
